Boursin Mashed Potatoes

There’s a lot to love about a big bowl of fluffy mashed potatoes, but add a wheel of Boursin cheese and you’ve got the most delicious mashed potatoes ever! Creamy, rich, and perfectly seasoned with just a handful of ingredients and hardly any effort. Serve this cheesy side dish with your Thanksgiving or Christmas dinners and please everyone at the table.
What Makes This Recipe So Good
- Fluffy potatoes and creamy Boursin are an incredible match, and the recipe couldn’t be easier. Since the Boursin comes already seasoned, there’s not much you need to do or add. These flavor-packed potatoes pretty much take care of themselves!
- Speaking of the Boursin, we’re using the garlic & fine herb variety here, but you can make Boursin mashed potatoes with whichever type you like best. Even the dairy-free variety will work! Chef’s Tips
- For the smoothest, fluffiest mashed potatoes, you want to use Yukon gold or russet varieties. They’re nice and starchy so they’ll give you the texture you’re looking for, whereas varieties like red potatoes are too waxy to fluff up properly. Also, make sure you remove the potato skins completely before boiling and mashing. They’re fine to eat, so leave them if you like, but they’ll hinder the creaminess a little.
- When you’re mashing the potatoes, don’t overdo it. Yes, it IS possible. Overmashed potatoes turn into a gummy, gluey consistency that you can’t really recover from. Instead, stop mashing once all the ingredients are just incorporated.
- Adding cold dairy products to hot foods can cause them to separate or curdle. The trick to avoid that? It’s simple, really… just make sure they’re not cold! Take the milk out of the fridge when you start boiling the potatoes, and set the Boursin out or pop it in the microwave for a few seconds, just enough to soften it. They’ll incorporate much better when they’re closer to room temperature.

Boursin Mashed Potatoes
Ingredients
- 3 pounds Yukon gold potatoes or russet potatoes; washed, peeled, cubed
- 1 big pinch salt plus more to taste
- ¼ cup butter
- ½ cup milk of choice at or near room temperature
- 1 5.2-ounce wheel Boursin garlic & fine herb cheese at room temperature, cut into small pieces
- finely chopped fresh chives optional, to garnish
Equipment
- Large pot no lid needed
- Colander
- Large bowl
- Potato masher
- small microwave-safe bowl
Instructions
- Place cubed potatoes in large pot. Cover potatoes with enough water that waterline sits approximately 1" above top of potatoes. Sprinkle 1 large pinch salt into water.
- Heat pot over medium-high heat. Once water begins to boil, reduce heat to low. Simmer, uncovered, 15 minutes or until potatoes can be easily pierced with tines of fork.
- Remove pot from heat. Carefully pour water and potatoes out of pot and into colander. Drain well, then transfer potatoes to large mixing bowl. Use potato masher to lightly mash potatoes.
- Place butter in small, microwave-safe bowl. Microwave 30 seconds or until butter is melted but not bubbling or burnt.
- Add melted butter, milk, and pieces of Boursin to mixing bowl with potatoes. Resume mashing until potato mixture is light and fluffy, being careful not to overwork potatoes. Taste potato mixture and add salt if desired.
- Transfer mashed potatoes to serving bowl or plates. Garnish with chopped chives if desired and serve warm.
Notes
- Boursin mashed potatoes can be prepared a little early if needed. Just transfer them to an oven-safe dish, cover the dish tightly with aluminum foil, and place the dish in an oven preheated to 200° Fahrenheit. Check the potatoes periodically with a thermometer to ensure their temperature never falls out of the food-safe range (below 140° Fahrenheit).
- Make it Dairy Free: Use almond or coconut milk, dairy-free butter, and Boursin Dairy-Free.
