What Makes This Recipe So Good
- Chicken spiedini are jam-packed with flavor! The chicken breast pieces are marinated in a mixture of olive oil, lemon juice and white wine, then breaded with Italian seasoned breadcrumbs. Grilled until perfectly crispy on the outside, while super tender and moist on the inside, the texture of this chicken is out of this world satisfying!
- It’s a such great chicken dish for entertaining or Tuesday night dinner! Super easy to make, it cooks quickly and everyone will love it! Great for every season, you can grill the spiedini for a barbecue gathering during summertime, or simply use a grill pan or cast iron skillet indoors in the winter.
- You can serve chicken spiedini with anything you’d like. Pasta is always a good choice, or rice, and grilled veggies, like broccolini, spaghetti squash or cauliflower. They would be very delicious with a side salad too, like this strawberry goat cheese salad or this tasty antipasto salad.
Chef’s Tips
- Marinating the chicken will give it all the amazing flavor and juiciness. Let is sit in the mixture for 1 hour minimum, or up to 12 hours. I don’t recommend marinating more than 12 hours, as sometimes over-marinating chicken can alter the texture a bit.
- You can use either metal or wooden skewers. They both work great. But if you use wooden, soak them fully submerged in water for about 30 minutes before adding the chicken bites to them. That’ll prevent them from burning when cooking the chicken on the grill or grill pan.
- Italian-seasoned breadcrumbs are usually easy to find, but if for any reason you only see plain ones, you can easily flavor them yourself by adding 1/2 to 1 teaspoon of dry Italian seasoning to it. More or less of it to taste! You can easily do this with gluten free breadcrumbs too if you stay away from wheat.

Chicken Spiedini
Ingredients
For the chicken
- 2 pounds chicken breasts boneless, skinless
- salt more or less to taste
- freshly ground black pepper more or less to taste
- ¼ cup olive oil
- ¼ cup dry white wine such as pinot grigio or sauvignon blanc
- 2 tablespoons lemon juice
- 1 cup Italian seasoned breadcrumbs
For the garlic butter sauce
- ½ cup butter 1 stick
- 4 cloves garlic minced
- 1 tablespoon lemon juice
- 1 tablespoon fresh parsley finely chopped
Equipment
- medium glass bowl
- whisk
- plastic wrap or foil optional
- Tongs
- Plate
- shallow bowl
- skewers
- spray cooking oil
- grill or grill pan
- Small saucepan
Instructions
- Cut chicken breasts into 1-inch pieces, then season to taste with salt and black pepper.
- In medium glass bowl, whisk together olive oil, white wine and lemon juice. Add chicken pieces to bowl, then cover with lid, plastic wrap or foil. Place bowl in fridge, and let chicken marinate for at least 1 hour and up to 12 hours.
- When ready, remove bowl from fridge, then remove chicken from marinade with tongs and place on plate. Add breadcrumbs to shallow bowl, then dunk chicken pieces into breadcrumbs until fully coated.
- Slide 4 to 5 pieces of chicken coated with breadcrumbs onto skewers.
- Lightly spray grill or grill pan with spray cooking oil, and heat on medium-high heat. Add chicken skewers to grill and cook for 4 to 5 minutes, then flip skewers, and continue cooking for another 4 to 5 minutes, or until chicken is golden brown and fully cooked through. Once cooked, remove from grill and set aside to rest for a few minutes.
- Add butter to small saucepan, and melt over medium-high heat. once melted, add minced garlic and cook for 2 to 3 minutes, stirring often, or until fragrant.
- Remove saucepan from heat, stir in lemon juice and fresh parsley. Drizzle garlic butter sauce all over chicken spiedini, and serve warm with side of choice.
Notes
- While we marinate the chicken in a bowl, you can also marinate it in a gallon size plastic sealable bag, such a Ziploc, if you prefer.
- Make it gluten free: use gluten free breadcrumbs. If you can’t find Italian seasoned gluten free ones, add ½ teaspoon to 1 teaspoon (more or less to taste) of Italian seasoning to breadcrumbs and stir it in well.

We didn’t test it that way, but that should be fine. Just make sure the chicken is cooked through completely. Keep in mind that the breadcrumbs likely won’t get as crispy in the oven, but they’ll still be delicious!
