Bright, tangy keto lemon curd is a deliciously citrus sweet treat that’s totally added-sugar-free! 4 ingredients is all you need for a delightful 1g-net-carb lemon curd that’s perfect on its own and even better with your favorite keto baked goods.

- I know what you’re thinking. “Cheryl, this is KETO. Those baked things you just mentioned are full of CARBS and SUGAR and GRAINS and GLUTEN.” Yes, yes, that’s completely true, but! Recreating some of those classic treats in a keto way really couldn’t be easier – and you generally can’t even tell they’re keto. I hear you, though. And you can totally forgo the baked goods entirely and enjoy this keto lemon curd on its own or with a dollop of whipped cream, a couple of fresh berries, and crunchy keto granola for a citrusy keto parfait.
- This recipe gives you a perfect keto curd with a thick, gooey texture and a tangy-but-sweet citrus flavor. It’s sort of like a custard, but with more intensity (in a good way!). You only need 4 ingredients to create it, too!
Chef’s Tips
- Swerve and erythritol can sometimes be gritty even after heating them. If you’re at all concerned about the texture, use a powdered version instead of a granular version. You could also use allulose instead – it tends to melt better.
- I really recommend you use the lemon zest! It’s an optional ingredient but it adds SO MUCH flavor and brightness to the lemon curd. Plus, you really need to use fresh lemon juice here, so you’ll already have the lemons! Zesting them takes no time at all.
- This recipe only uses egg yolks, which means you’ll have a handful of egg whites leftover. Don’t throw them out!! There are so many ways you can use egg whites for more than just scrambled eggs or egg white omelettes.

Creamy Keto Lemon Curd
Ingredients
- water
- 4 large egg yolks at room temperature
- ½ cup Granular Swerve Sweetener or other keto sweetener
- ⅓ cup freshly squeezed lemon juice
- 1 tablespoon fresh lemon zest optional
- 5 tablespoons butter divided
Equipment
- medium saucepan
- large heat-safe glass bowl, should just sit in saucepan like a double-boiler
- whisk
- refrigerator-safe jar or bowl
- Plastic Wrap
Instructions
- Fill medium saucepan with 2 to 3 inches water. Place over high heat and bring water to boil, then reduce heat to low. Place large heat-safe bowl on top of saucepan to create double-boiler. Note: top of water should not touch bowl. Be sure to leave space between.
- Add egg yolks, Swerve, lemon juice, and lemon zest (if using) to bowl. Vigorously whisk without stopping until mixture has thickened, approximately 8 to 10 minutes.
- Carefully remove bowl from heat. Add 1 tablespoon butter to mixture and whisk thoroughly until butter has completely melted. Repeat with remaining 4 tablespoons butter, adding in 1 tablespoon increments and melting completely before adding next tablespoon.
- When all butter is fully incorporated, carefully transfer lemon curd mixture to jar or bowl. Cover with plastic wrap, gently pressing plastic wrap against top of lemon curd.
- Place covered lemon curd in refrigerator and chill at least 2 hours or until completely cooled. Serve chilled.
Notes
- If your heat is too high, the curd will burn.
- Lemon Juice: You’ll notice a difference in texture and flavor if you use bottled lemon juice and not fresh. For the best lemon curd, use fresh lemon juice!
- Sweeteners: The amount of sweetener you need will vary depending on the type you use. If you’re using allulose instead of Swerve, you may need more; with monk fruit or stevia you may need less.
- Leftovers: Refrigerate in an airtight container up to 1 week.

No, that’s the information for 1 serving out of 4. You don’t count the carbs from the Swerve, so there’s 1g net carb per serving.
