Roasted Cauliflower Steaks

These roasted cauliflower steaks are simply seasoned but absolutely delicious. Tender and packed full of flavor, they are the perfect vegan main course or an easy side dish.

Chef’s Tips
- We really love the smoky, spicy flavor of smoked paprika, but you can use regular paprika if you’d like.
- You can either save your extra pieces of cauliflower for a later recipe, make additional steaks if they are big enough, or roast them with your steaks and save them for a snack.
- We love these steaks with a side of ranch or even chimichurri.

Roasted Cauliflower Steaks
Ingredients
- 1 medium head cauliflower approximately 2-3 pounds
- ¼ cup olive oil
- 1 teaspoon sea salt more or less to taste
- 1 teaspoon garlic powder more or less to taste
- 1 teaspoon onion powder more or less to taste
- 1 teaspoon smoked paprika more or less to taste
- ½ teaspoon chili powder more or less to taste
- chopped fresh parsley for garnish, optional
Equipment
- Cutting board
- Sharp knife
- Baking sheet
- Small bowl
- small whisk or small silicone spatula
- pastry brush
- Tongs
Instructions
- Preheat oven to 450º Fahrenheit. Place 1 medium head cauliflower on cutting board.
- Remove leaves from base using sharp knife. Slice cauliflower head into two equal halves, then slice 2 steaks, each approximately 1” thick, from each half. Place cauliflower steaks on large baking sheet.
- Add ¼ cup olive oil, 1 teaspoon sea salt, 1 teaspoon garlic powder, 1 teaspoon onion powder, 1 teaspoon smoked paprika, and ½ teaspoon chili powder in small mixing bowl. Mix ingredients together until well blended.
- Place cauliflower steaks on baking sheet and brush sides facing up with half of olive oil mixture. Once covered, place baking sheet in preheated oven.Brush half spice mixture onto cauliflower steaks, covering each steak completely on all visible sides.
- Once cauliflower steaks have been seasoned, place baking sheet in preheated oven. Roast steaks 15 minutes, then carefully remove baking sheet from oven.
- Flip cauliflower steaks over. Brush remaining spice mixture over sides of cauliflower steaks now facing up.
- Return baking sheet to oven. Roast cauliflower steaks 15 minutes more, or until steaks are golden brown and tender.
- Carefully remove baking sheet from oven. Transfer cauliflower steaks to serving plates, garnish with chopped fresh parsley if desired, and serve warm.
Notes
- Leftovers: Refrigerate in an airtight container up to 4 days. To reheat, cover steaks and microwave on 50% power until warmed through, or reheat steaks in oven at 325°F until warmed through.

Wow! This looks amazing and I was contemplating in making it…but as I read the nutritional information, it blows my mind as to how much sodium I just don’t understand where that high content of sodium is coming from??? We are cutting back on our sodium intake and when I see a recipe I skip on salt. If you could be so kind as to explain the sodium on this recipe it would be great . Many thanks

While everything has some amount of sodium, the majority of the sodium content here comes from the teaspoon of sea salt, which on its own contains around 2000mg of sodium. Since we view this recipe as yielding 2 servings, one serving would contain half of that amount – so a minimum of 1000mg sodium.
You can use kosher salt instead, which has around 1240mg of sodium in 1 teaspoon, or you can replace the sea salt with something like No Salt (a sodium-free salt alternative).
