Mix up your next taco night with this delicious, easy taco pie recipe. It’s loaded with ground beef, onion, bell pepper, salsa, refried beans, corn, and taco seasoning, all topped with shredded cheese and baked in a savory pie crust. This taco pie is going to be a new family favorite dinner!

🌮 What We Love About This Recipe

  1. It’s full of flavor, and unlike most typical tacos, all of the ingredients are distributed perfectly throughout every bite!
  2. Your whole family will love it! Tacos are fun on their own, of course, but taco pie is a great way to mix things up a little.
  3. This taco pie recipe is SO easy! Of course, you can make it as hands-off or as involved as you want. You can use all store-bought/pre-packaged ingredients, or make some things (like the salsa or the taco seasoning) from scratch.
  4. Pre-made, frozen pie crust keeps the taco pie super simple. Sure, you can make a homemade savory pie crust if you want, but sometimes it’s nice to keep things easy. For a twist, you could use flaky, buttery crescent roll dough instead of a frozen pie crust.

👩🏼‍🍳 Chef’s Tips

  • Drizzle a little avocado salsa or cilantro lime dressing across the top of your easy taco pie just before serving. DELICIOUS!
  • Don’t over-bake the pie crust! On its first trip through the oven, bake it just until golden brown. Take it out of the oven even if you’re not done with the ground beef mixture yet.
  • This recipe is great for leftovers! Just refrigerate any leftover slices in an airtight container up to 5 days. When you’re ready to eat, pop it in a 400° Fahrenheit pre-heated oven for 15-25 minutes. Bake it just until it’s warmed through. You can also freeze your baked pie – just let it cool completely first!

Easy Taco Pie Recipe

Mix up your next taco night with this delicious, easy taco pie recipe, loaded with ground beef, onion, bell pepper, salsa, refried beans, corn, and flavor!

Ingredients

For the Pie Crust

  • 1 9-inch ready-to-bake pie crust

For the Taco Pie

  • 1 pound ground beef
  • 1 teaspoon avocado oil
  • 1 cup diced green bell pepper approximately 1 medium green bell pepper
  • ½ cup diced white onion approximately half of 1 medium white onion
  • 1 2-ounce packet taco seasoning or make your own
  • ½-¾ cup water according to instructions on packet of taco seasoning
  • ½ cup jarred salsa of choice
  • 1 16-ounce can refried beans or make your own
  • ¾ cup corn kernels defrosted if frozen, drained and rinsed if canned
  • 1 cup shredded Mexican cheese

Suggested Toppings (All Optional)

  • shredded lettuce
  • diced tomatoes
  • sour cream or Greek yogurt
  • avocado sliced or diced
Get Recipe Ingredients

Equipment

  • Oven
  • Pie dish
  • Fork
  • Large skillet
  • Large spoon or silicone spatula
  • Bowl

Instructions 

  • Preheat oven to 400° Fahrenheit.
  • Place 1 9-inch ready-to-bake pie crust in pie dish. Crimp edges of pie as needed, then poke small holes in bottom of pie crust using tines of fork.
  • Place pie dish in preheated oven. Bake pie crust 12 to 15 minutes, or until crust is just golden brown.
  • Once golden, remove pie dish from oven and set aside.
  • While pie crust bakes, place large skillet on stovetop over medium heat. Add 1 pound ground beef to skillet and cook, breaking up ground beef with spatula, until ground beef is browned and crumbled.
  • Once ground beef is browned, drain fat from skillet and discard. Transfer ground beef to medium bowl and set aside.
  • Return skillet to stovetop over medium heat. Add 1 teaspoon avocado oil and warm oil, tilting skillet occasionally to distribute oil across entire surface.
  • When oil is hot and shimmery, add 1 cup diced green bell pepper and ½ cup diced white onion to skillet. Stir to incorporate and cook, stirring occasionally, 6 to 8 minutes or until peppers and onions have softened.
  • Return browned ground beef to skillet. Add 1 2-ounce packet taco seasoning and ½-¾ cup water (refer to taco seasoning packet instructions for exact amount) to skillet. Stir to incorporate, then simmer mixture, stirring occasionally, until water is absorbed into meat.
  • Once water has been absorbed, add ½ cup jarred salsa of choice, 1 16-ounce can refried beans, and ¾ cup corn kernels to skillet. Stir until ingredients are fully incorporated and well-mixed, then allow mixture to simmer 1 minute.
  • Transfer mixture to prebaked pie crust. Spread mixture out evenly across pie crust, covering bottom of crust completely.
  • Sprinkle 1 cup shredded Mexican cheese over top of pie filling, covering pie filling completely and evenly.
  • Place taco pie in preheated oven. Bake pie 12 to 15 minutes or until cheese is melted and bubbly.
  • Once cheese has melted, carefully remove pie dish from oven. Let pie cool slightly, then slice pie into 8 pieces. Top with shredded lettuce, diced tomatoes, sour cream, avocado, or other toppings as desired. Serve warm.

Notes

  • Ground Beef: You can use ground beef with whatever fat content you prefer. 
  • Make it Keto: Use the crust from our keto meat pie recipe. Use a ground beef with higher fat content, a keto-friendly taco seasoning, and a keto-friendly salsa with no added sugar. Leave out the refried beans and the corn. Onions are up to you.
  • Make it Gluten Free: Use a gluten-free frozen pie crust and make sure your taco seasoning is gluten free.
  • Make it Dairy Free: Make sure your pie crust doesn’t include any dairy ingredients and use a vegan/dairy-free cheese.

    How much refried beans and what step do u add the beans.how much salsa

      Hi, Holly! Is the recipe card showing up in full for you? We list ½ cup of salsa and 1 full 16-ounce can of refried beans in the ingredients list. They’re both added to the skillet in step 10.

    What would be the directions on how to cook the Taco Pie after it’s been frozen?

      You can just pop it in the oven at 350 until it’s heated through (45-60 minutes, or until bubbling around the edges and hot in the center). Cover with foil for first 30 minutes, then uncover and continue to cook.
