Instant Pot Sushi Rice
Rinse rice with running water for 3 mins by using a sieve or strainer.
Add rinsed rice & 1 1/4 cups water to Instant Pot. Stir to combine.
Place lid on IP & set valve to Sealing position. Cook on Manual high pressure for 10 mins, then Natural Release for 10 mins.
In a small bowl, whisk together rice vinegar, salt, white sugar, & oil.
Remove lid from Instant Pot. Fluff with fork.
Gently fold in the liquid mixture into the rice. Let rice come to room temp before using.
Keep rice covered with damp towel if not using immediately.
