Instructions
Preheat air fryer to 400° Fahrenheit.
Add 1 ½ pounds red potatoes, 2 tablespoons extra virgin olive oil, ½ teaspoon salt, ¼ teaspoon freshly cracked black pepper, 1 teaspoon garlic powder, and ½ teaspoon smoked paprika to large bowl. Toss until ingredients are fully incorporated and potatoes are thoroughly coated in oil and spices.
Transfer seasoned potatoes to air fryer basket, arranging potatoes in one single layer. Place basket in air fryer.
Air fry potatoes 10 minutes, then remove basket from air fryer. Shake basket to toss potatoes. Return basket to air fryer.
Air fry potatoes 5 to 10 minutes more, until potatoes are golden and crispy.
Transfer potatoes to serving plates or large bowl. Garnish with chopped fresh parsley if desired and serve with lemon wedges.
