Preheat air fryer to 400° Fahrenheit.
Rinse and scrub 1 large sweet potato under running water, removing as much surface dirt as possible. Once rinsed, dry sweet potato with clean dish towel or paper towels, then peel sweet potato completely.
Place peeled sweet potato on cutting board. Carefully cut sweet potato into bite-sized cubes, making sure cubes are as equally-sized as possible to ensure even cooking.
Transfer cubed sweet potatoes to large mixing bowl. Drizzle 1 tablespoon neutral oil over potato cubes, then add ½ teaspoon garlic powder, ½ teaspoon onion powder, ¼ teaspoon freshly cracked black pepper, and ½ teaspoon salt. Stir or toss ingredients together until sweet potato cubes are completely coated in oil and seasonings.
Remove air fryer basket from air fryer. Transfer seasoned sweet potato cubes to basket and spread potatoes out evenly across basket.
Return basket to air fryer. Air fry sweet potato cubes 6 minutes, then remove basket from air fryer. Shake basket to toss and flip potato cubes, then spread potatoes into even layer and return basket to air fryer.
Air fry potatoes 6 minutes more, then begin checking doneness. Continue air frying, checking potatoes every 60 seconds, until potato cubes are cooked through, with tender insides and crispy outer layer.
When satisfied with doneness of sweet potato cubes, remove basket from air fryer. Taste sweet potatoes and season with additional salt or pepper if desired, then serve warm.
Recipe Notes
Servings: Number of servings will vary depending on the size of your sweet potato and the size and number of potato cubes you cut. You can cook any number of sweet potatoes this way, but work in batches as needed to avoid overcrowding the basket. If the basket is too full, the potato cubes won't cook evenly.
Cook Times: Cook times will vary from one air fryer to another. Adjust cook time as needed based on your specific results and preferences. Be careful not to overcook potato cubes or they'll be dry, tough, or burnt.
