Remove turkey from fridge 20 minutes before cooking. Roll breast into even shape and tie in 3 or 4 places with kitchen twine. Preheat air fryer to 350°F.
Mix 4 tablespoons softened unsalted butter with 1 teaspoon olive oil. Rub all over turkey, covering every surface.
Place turkey in air fryer basket, smoothest side up. If using bacon, drape 3 to 4 strips across top and tuck ends under turkey.
Air fry 15 minutes. Remove bacon, if using. Carefully flip turkey and brush top with 1 tablespoon melted unsalted butter.
Air fry 15 minutes more, then check temperature every 5 minutes. Remove turkey when instant-read thermometer in thickest part reads 160°F, about 45 minutes total. If outside browns too fast, tent loosely with foil and tuck edges under turkey.
Transfer turkey to cutting board and rest 15 minutes without cutting. Pour drippings from bottom of air fryer into measuring cup and skim off excess fat.
