For the salmon
1poundsalmon fillet(skin removed)
1tablespoonolive oil
1tablespoonCajun seasoning(store-bought or homemade)
½teaspoonsmoked paprika
½teaspoongarlic powder
For the fries
1bag frozen French fries(waffle fries or shoestring work best)
1cupshredded cheddar-jack cheese(or pepper jack for extra kick)
Toppings (build to your taste)
½cuppico de gallo(or diced tomatoes, red onion, cilantro)
½avocado(diced (or guacamole))
¼cuppickled jalapeños
2tablespoonschopped green onions
Sour cream(or chipotle crema drizzle)
Fresh cilantro(for garnish)
Optional: corn kernels, black beans, or a squeeze of lime

Bake or air fry the French fries according to package directions, until golden and crispy. If you are air frying them, toss them a couple of times during cooking to make sure they cook evenly.
Once fries are cooked, spread them on a large oven-safe platter or cast-iron skillet. Sprinkle with shredded cheese and return to oven for 2–3 minutes until the cheese melts. Alternatively, scatter the cheese over the fries and air fry, turning them out onto a serving dish once the cheese has melted.
Meanwhile, cut the salmon into bite-sized cubes. Toss with olive oil, Cajun seasoning, smoked paprika, and garlic powder.
Heat a cast-iron skillet over a medium-high heat. Sear the salmon for 2–3 minutes per side until blackened outside and just cooked inside. Remove and set aside.
Scatter the blackened salmon cubes on top of the cheesy fries. Spoon over Pico de Gallo, avocado, pickled jalapeños, corn/beans if using. Drizzle sour cream or chipotle crema over the top, and finish with chopped green onions and cilantro.
