For the Buffalo Sauce
¼cupLouisiana style hot sauce
¼cupunsalted butter
1tablespoonwhite vinegar

For the Chicken
1poundfully-cooked chicken(shredded or chopped into 1-inch chunks)
For the Fries
132-ounce bagfrozen french fries(any type, cooked as preferred)
For the Toppings
8ouncesshredded fresh mozzarella
⅓cupblue cheese crumbles
⅓cupsliced green onions(green parts only)
⅓cupranch dressing

Instructions
Preheat oven to 400° Fahrenheit.
Add ¼ cup Louisiana style hot sauce, ¼ cup unsalted butter, 1 tablespoon white vinegar, ¼ teaspoon Worcestershire sauce, ⅙ teaspoon garlic powder, ⅙ teaspoon paprika, salt, and freshly cracked black pepper to medium saucepan. Place saucepan on stovetop over medium-low heat.
Whisk ingredients together until sauce begins to simmer and butter is completely melted. Taste sauce and adjust salt and/or pepper as needed.
Simmer buffalo sauce 1 to 2 minutes, then remove from heat and set aside. Let sauce cool completely.
Once buffalo sauce is cooled, pour sauce over 1 pound fully-cooked chicken in large mixing bowl. Stir ingredients together until chicken is fully coated in buffalo sauce.
Layer 1 32-ounce bag frozen french fries (cooked as preferred) evenly across bottom of baking pan. Top fries with 8 ounces shredded fresh mozzarella and prepared buffalo chicken, spreading cheese and chicken evenly across top of fries.
Place baking pan in preheated oven. Bake 5 minutes or until mozzarella is melted, then carefully remove baking pan from oven.
Sprinkle ⅓ cup blue cheese crumbles and ⅓ cup sliced green onions across top of melted mozzarella. Immediately before serving, drizzle ⅓ cup ranch dressing across top of dish and serve warm with romaine lettuce if desired.
Recipe Notes
Buffalo Sauce: You're welcome to use a store-bought buffalo sauce instead of making your own if you prefer.
Chicken: You can cook chicken specifically for this recipe, or you can use leftover chicken or rotisserie chicken. Whatever you use, be sure to shred it or chop it well.
Make it Vegetarian: Omit the Worcestershire sauce and replace the chicken with chopped cauliflower florets (cooked as preferred) or tofu (cooked as preferred).
