¼cupolive oil
1tablespoonfresh lemon juice
1cupItalian breadcrumbs
6mediumboneless, skinless chicken cutlets(evenly sized, evenly thick; approximately 2-3 pounds)
6thin slicesprosciutto
6slices fresh provolone
8-10slicesfresh mozzarella (or 2 large fresh mozzarella balls sliced into 4-5 pieces each)

Preheat oven to 350° Fahrenheit. Lightly grease baking dish with oil cooking spray and set aside.
Whisk together olive oil and lemon juice in shallow bowl. Add 1 cup of breadcrumbs to separate shallow bowl.
One at a time, dip chicken cutlets into olive oil and lemon mixture first, then dip into breadcrumbs until evenly coated, then lay each cutlet on plate.
Top each breaded cutlet with 1 slice of prosciutto, then 1 slice of provolone, then 1 to 2 slices of fresh mozzarella. Roll each cutlet tightly into cylinder, then place in greased baking dish with seam of roll-up facing down.
Place baking dish in preheated oven. Bake 30 to 35 minutes, until top is golden brown and chicken reads 160° Fahrenheit when checked with an internal meat thermometer. Remove baking dish from oven and let chicken rest 5 to 10 minutes then serve warm. with desired sides.
