Preheat the oven to 350°F. Lightly grease an 8x8-inch or 9x9-inch baking dish with coconut oil, butter, or cooking spray.
Add 6 peeled, cored, and sliced apples to a large bowl. Add 3 tablespoons maple syrup, 1 tablespoon lemon juice, 1 teaspoon cinnamon, and 1 tablespoon arrowroot powder or cornstarch. Toss until the apples are evenly coated.
Transfer the apple mixture to the prepared baking dish, including any liquid left in the bowl. Spread the apples into an even layer.
In a medium bowl, combine 1½ cups rolled oats, ½ cup chopped pecans, ¼ cup almond flour, ½ teaspoon cinnamon, and ¼ teaspoon sea salt.
Pour 3 tablespoons maple syrup, 3 tablespoons melted coconut oil or butter, and 1 teaspoon vanilla extract over the oat mixture. Stir until everything is evenly moistened and small clumps begin to form.
Scatter the topping evenly over the apples. Don’t press it down—the loose, craggy surface helps it become crisp.
Bake uncovered for 40 to 45 minutes, or until the topping is deep golden brown and the apple filling is bubbling around the edges.
Let the apple crisp rest for 10 minutes before serving so the filling can thicken. Serve warm on its own or with vanilla ice cream or coconut whipped cream.
