14ounceskielbasa(sliced into ½-inch-thick pieces)
1cupfinely chopped white onion(approximately 1 medium white onion)
1 ½tablespoonsminced garlic(approximately 3 large cloves)
8cupsthinly sliced green cabbage(approximately 1 medium head)
1teaspoonpaprika
salt(to taste)

Place large skillet on stovetop over medium heat. Add 1 tablespoon avocado oil to skillet and heat pan until oil is hot and shimmery.
When oil is hot, add 14 ounces kielbasa to skillet. Sauté kielbasa, flipping pieces occasionally, until lightly browned on both sides, approximately 5 to 7 minutes total. Transfer browned kielbasa to plate and set aside.
Add 1 tablespoon avocado oil to skillet if needed and heat oil until shimmery. Add 1 cup finely chopped white onion to skillet. Stir to incorporate, then sauté onions, stirring occasionally, until softened, approximately 3 to 5 minutes.
Once onions have softened, add 1 ½ tablespoons minced garlic to skillet and stir to incorporate. Sauté garlic 30 to 60 seconds or until fragrant.
Add 8 cups thinly sliced green cabbage to skillet and stir to incorporate. Cook cabbage, stirring frequently, 10 to 12 minutes or until cabbage is slightly wilted and onions have darkened.
When cabbage has wilted, add 1 teaspoon paprika and stir until evenly incorporated.
Return kielbasa to skillet and cook 2 minutes, stirring constantly, until kielbasa is hot.
Season kielbasa and cabbage with salt and freshly cracked black pepper to taste.
When satisfied with seasoning, divide dish into preferred portions and serve immediately.
Leftovers: Let kielbasa and cabbage cool completely, then transfer to an airtight container and refrigerate up to 3 days. Reheat on the stovetop over low heat.
