These stewed potatoes are delightfully creamy and require just four ingredients to make! This savory side dish comes together in just a few simple steps.
Servings: 6 servings
- 2 pounds potatoes peeled and cut into 1-inch cubes, see Notes
- ½ cup butter
- 1 teaspoon salt
- ½ teaspoon black pepper
Place potatoes, butter, salt and black pepper in a large pot then fill with just enough water to cover potatoes.
Bring to a boil then reduce to a gentle boil and cook until potatoes are soft or pierced easily with a fork, about 20-30 minutes.
Bring heat back up to a boil and stir often until liquid has reduced and potatoes have broken down to your desired consistency, about 10 minutes.
Recipe yields approximately 6 servings. Nutritional values shown reflect information for one serving of stewed potatoes made with gold potatoes and unsalted butter. Macros may vary slightly depending on specific brands and types of ingredients used.
- Potatoes: I used Yukon gold potatoes and had great results, though feel free to use whatever kind of white potato you'd like.
