Cognac cherry or applewood chips

2ouncestequila(or mezcal)
1ounceCointreau(or other good orange liqueur)
1ouncefresh lime juice
¾ounceagave syrup
ice
lime wedge + coarse salt(for the rim - you can also use smoked salt or Tajín here, or even a salt-sugar combination)

Rim a rocks glass with lime and salt (half rim looks best). Fill with fresh ice.
Smoke the glass using your smoking saucer (cognac cherry or applewood both work well) and set aside.
Add tequila, Cointreau, lime juice, and agave to a cocktail shaker. Fill with ice and shake hard until very cold and slightly diluted — about 15 seconds.
Double strain into the smoked glass. Garnish with a lime wheel or wedge.

Use mezcal: Mezcal in place of the tequila will make a slightly more complex margarita.Pick your rim: There are so many different rim options depending on what you fancy: just salt (choose a nice sea salt for the best flavor), sugar and salt for a bit of sweetness, or Tajin and salt for a spicy kick!
