This easy recipe makes perfect cut-out Christmas cookies every time, and they're vegan-friendy! All you have to do is choose if you're going to ice them, or smother them in our go-to vegan buttercream.

Ingredients Needed
For the Cookies

Favorite Easy Decorating Icing
3cupssifted confectioners’ sugar(the sugar MUST be sifted)
1-2tablespoonsvegan milk of choice(adding in more if needed for proper spreading consistency)
1tablespoonlight corn syrup
½teaspoonvanilla
food coloring as needed
colored granulated sugar and holiday sprinkles(if desired, for topping)
Favorite Buttercream Icing
½cupvegan butter(softened)
16ouncespowdered sugar(16-ounce package)
3tablespoonsvegan milk of choice

Instructions
Sift the flour, baking soda, and salt into a bowl, and set aside.
Beat the sugar and vegan butter in a mixing bowl with an electric mixer until creamy, about 2 minutes. Mix in vanilla.
Stir in the flour mixture until incorporated, then add the milk, 1 tablespoon at a time, until the dough comes together. Wrap the dough in plastic wrap and refrigerate for 30 minutes.
Preheat the oven to 350 degrees F (175 degrees C). Line two baking sheets with parchment paper.
Roll chilled dough on a floured surface to a thickness of 1/4 to 1/2 inch. Dip each cookie cutter in flour and cut out cookies, re-flouring as needed. Place cookies onto the prepared baking sheets.
Bake in the preheated oven until just turning golden, about 10 minutes. Cool on a wire rack before decorating.
Recipe Notes
These cookies should take 1 hour to bake, including preparation, cooking and chilling time. As there are plenty of different options and skill levels, please note decorating time is not included in the preparation time for these cookies!
For the Decorating Icing (enough for a thick layer of icing + extra for more elaborate decorations)
In a small bowl mix the confectioners sugar with milk (start with 1-2 tablespoons, but you will likely need more milk for the perfect spreading consistency).
Whisk in the corn syrup and vanilla extract until the icing is smooth and glossy. If the icing is too thick add in a small amount more of corn syrup.
Divide into as many separate bowls as you wish for different colors. Add in food coloring until desired intensity is achieved, always starting with a smaller amount and adding gradually!
Paint the icing over the cookies using a brush, dip tops of cookies into icing, or a piping bag to decorate. Add other decorations as desired, and allow to set on waxed paper or a cooling rack.
For the Favorite Buttercream (enough to thickly frost the cookies)
Combine the butter and powdered sugar, creaming until light and fluffy using a en electric hand mixer or stand mixer.
Add the milk and vanilla; beat until of spreading consistency.
Color frosting if desired, then spread onto the cooled cookies. Sprinkle with colored granulated sugar, if desired.
