Cut chicken breasts into 1-inch pieces, then season to taste with salt and black pepper.
In medium glass bowl, whisk together olive oil, white wine and lemon juice. Add chicken pieces to bowl, then cover with lid, plastic wrap or foil. Place bowl in fridge, and let chicken marinate for at least 1 hour and up to 12 hours.
When ready, remove bowl from fridge, then remove chicken from marinade with tongs and place on plate. Add breadcrumbs to shallow bowl, then dunk chicken pieces into breadcrumbs until fully coated.
Slide 4 to 5 pieces of chicken coated with breadcrumbs onto skewers.
Lightly spray grill or grill pan with spray cooking oil, and heat on medium-high heat. Add chicken skewers to grill and cook for 4 to 5 minutes, then flip skewers, and continue cooking for another 4 to 5 minutes, or until chicken is golden brown and fully cooked through. Once cooked, remove from grill and set aside to rest for a few minutes.
Add butter to small saucepan, and melt over medium-high heat. once melted, add minced garlic and cook for 2 to 3 minutes, stirring often, or until fragrant.
Remove saucepan from heat, stir in lemon juice and fresh parsley. Drizzle garlic butter sauce all over chicken spiedini, and serve warm with side of choice.
Recipe Notes
While we marinate the chicken in a bowl, you can also marinate it in a gallon size plastic sealable bag, such a Ziploc, if you prefer.
Make it gluten free: use gluten free breadcrumbs. If you can't find Italian seasoned gluten free ones, add ½ teaspoon to 1 teaspoon (more or less to taste) of Italian seasoning to breadcrumbs and stir it in well.
