½cupwhite whole wheat flour(optional but adds fiber without heaviness)

Preheat the oven to 375°F.
To make the peach filling, in a large bowl combine the peaches, maple syrup, lemon juice, vanilla, cinnamon, almond extract, cornstarch, and a pinch of salt. Mix well and pour into a lightly greased 9-inch baking dish.
To make the cobbler topping, in another bowl whisk together the all-purpose flour, whole wheat flour, baking powder, baking soda, and salt.
In another bowl, whisk together the melted butter, coconut oil, maple syrup, buttermilk, and vanilla.
Stir the wet ingredients into the dry just until combined. It will look like thick biscuit batter.
To assemble the cobbler, drop spoonfuls of batter over the peaches (don’t fully cover; gaps are good).
Drizzle the top lightly with the melted butter or coconut oil, and the sugar if using.
Bake for 35–40 minutes, until the topping is golden, and the peach filling is bubbling around the edges.
Let the cobbler rest for 10–15 minutes before serving so the filling thickens.
Recipe Notes
Use different fruit: Change up the stone fruit, or use a mix if you have plums or apricots on hand! Or, sticking with peaches a couple of handfuls of fresh or frozen raspberries would also be delicious. Ice cream pairings: Vanilla is the classic ice cream choice, but you could also level up by pairing this with fruit flavors (hello strawberry!).
