This Healthy Peach Cobbler takes just 1 hour to make, and still tastes like the real thing! Made with fresh or frozen peaches, this summertime dessert contains no refined sugars also. The perfect family dessert, topped with scoops of vanilla ice cream!

Why You’ll Love This Recipe

  • This Healthy Peach Cobbler is one of the easiest desserts that you can make, all you have to do is measure and mix, no messing around with rolling out pie crusts or whipping up frosting.
  • The cobbler topping uses a mix of all-purpose and white whole wheat flour for a lighter cobbler topping with added fiber!
  • As this cobbler works with either fresh or frozen peaches, so while it is totally coded as a summer dessert, it can actually be enjoyed year-round!

Chef’s Tips

  • Change up the stone fruit, or use a mix if you have plums or apricots on hand! Or, sticking with peaches a couple of handfuls of fresh or frozen raspberries would also be delicious.
  • Don’t skimp on the cornstarch! Tossing the fruit with cornstarch is essential for thickening the filling, otherwise you’ll end up with a runny cobbler!
  • Vanilla is the classic ice cream choice, but you could also level up by pairing this with our roasted strawberry buttermilk ice cream, or salted caramel ice cream!

Ingredients

Peach Filling

  • 6 cups sliced fresh or frozen peaches about 6–7 peaches
  • ⅓ cup pure maple syrup
  • 1 tablespoon lemon juice
  • 2 teaspoons vanilla extract
  • 1 teaspoon cinnamon
  • 1 teaspoon almond extract optional
  • 2 tablespoons cornstarch
  • pinch salt

Cobbler Topping

  • 1 cup all-purpose flour
  • ½ cup white whole wheat flour optional but adds fiber without heaviness
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon salt
  • ¼ cup melted butter
  • 2 tablespoons melted refined coconut oil
  • ¼ cup maple syrup
  • ½ cup buttermilk or milk + 1 teaspoon vinegar
  • 1 teaspoon vanilla

Optional for the top (recommended)

  • 1 tablespoon butter or coconut oil
  • 1 tablespoon turbinado sugar

  • 9-inch baking dish

Instructions 

  • Preheat the oven to 375°F.
  • To make the peach filling, in a large bowl combine the peaches, maple syrup, lemon juice, vanilla, cinnamon, almond extract, cornstarch, and a pinch of salt. Mix well and pour into a lightly greased 9-inch baking dish.
  • To make the cobbler topping, in another bowl whisk together the all-purpose flour, whole wheat flour, baking powder, baking soda, and salt.
  • In another bowl, whisk together the melted butter, coconut oil, maple syrup, buttermilk, and vanilla.
  • Stir the wet ingredients into the dry just until combined. It will look like thick biscuit batter.
  • To assemble the cobbler, drop spoonfuls of batter over the peaches (don’t fully cover; gaps are good).
  • Drizzle the top lightly with the melted butter or coconut oil, and the sugar if using.
  • Bake for 35–40 minutes, until the topping is golden, and the peach filling is bubbling around the edges.
  • Let the cobbler rest for 10–15 minutes before serving so the filling thickens.

Notes
