1teaspoonsesame oil
½cupdiced white onions
1cupfrozen mixed vegetables
2largeeggs
3tablespoonsbutter(divided)
4cupscooked white rice(cool to touch)
3tablespoonssoy sauce(divided)
1poundcooked lobster(cut into ½-inch-long pieces)
salt(to taste)
freshly ground black pepper(to taste)
sesame seeds(optional, to garnish)

In large skillet, heat sesame oil over medium-high heat. Add diced onion and frozen vegetables, and sauté until onion is softened and almost translucent, about 3 minutes.
With spatula or wooden spoon, push vegetables to one side of skillet. Crack eggs into empty side of skillet, and scramble them, stirring them constantly until cooked thru. Then mix eggs with vegetables.
Add butter and cooked rice to skillet, and mix with vegetables and eggs. Cook for 5 minutes stirring frequently, then add soy sauce, mix it in, and cook for about 1 more minute.
Stir in cooked lobster pieces, salt and black pepper. Cook until everything is combined and warmed thru, about 3 to 4 minutes. Portion lobster fried rice into bowls, sprinkle with sesame seeds if desired, and serve warm.
Recipe Notes
Make it Dairy Free: Replace the butter with neutral oil or plant-based butter.
Make it Gluten Free: Replace the soy sauce with lite tamari or coconut aminos.
