Instructions
Preheat oven to 350° Fahrenheit. Grease bottom and sides of 8x8 baking dish with spray oil or butter, then line baking dish with parchment paper, allowing paper to hang out of pan slightly on two sides.
Add melted butter, white sugar, and brown sugar to mixing bowl. Use hand mixer or stand mixer to beat ingredients together until mixture is fully combined.
Add eggs and vanilla extract to mixing bowl. Resume mixing on medium speed until mixture is light and fluffy, approximately 2 to 3 minutes. Set mixer aside.
Sift flour and matcha powder into mixing bowl. Sprinkle salt into bowl, then gently fold dry ingredients into wet ingredients with spatula, until ingredients are just incorporated.
Add white chocolate chips to brownie batter. Gently fold batter with spatula until chocolate chips are evenly distributed. Be careful not to overmix or batter can become dense.
Transfer batter to prepared baking dish and spread batter out evenly across dish. Place dish in preheated oven and bake 30 to 35 minutes, or until toothpick inserted in center of brownies comes out cleanly or with very few crumbs.
When brownies are fully baked, carefully remove baking dish from oven and set aside. Let brownies cool in baking dish 20 minutes or until completely cool. Once cool, use excess parchment paper to gently lift brownies out of baking dish, then slice brownies and serve as desired.
Recipe Notes
Make it Added-Sugar Free: Use Granular Swerve instead of white sugar and Brown Swerve instead of brown sugar. You can use Lily's or ChocZero white chocolate chips to avoid the added sugar in those, too.
Make it Gluten Free: Use gluten-free all-purpose flour that contains xanthan gum.
