Preheat smoker to 250° Fahrenheit.
Peel 1 large pineapple, then cut flesh of pineapple into long, equally-sized spears. Set spears aside.
Add ½ cup packed brown sugar, 1 ½ teaspoons ground cinnamon, and ½ teaspoon sea salt to small bowl. Mix ingredients together until well blended.
Rub cinnamon sugar mixture onto pineapple spears, coating all sides of each spear evenly.
Place seasoned pineapple spears directly onto grates of preheated smoker and close lid. Smoke pineapple spears, undisturbed, 20 minutes or until spears are lightly browned.
Once lightly browned, flip pineapple spears over. Smoke spears 20 to 30 minutes more or until spears are browned on other side.
Carefully remove browned pineapple spears from smoker. Serve as desired.
