Add 2 tablespoons unsalted butter to medium microwave-safe bowl. Microwave butter 30 seconds at 50% power, then carefully remove bowl from microwave and stir butter. Repeat until butter is melted but not bubbling.
Carefully remove bowl from microwave. Crack 1 large egg directly into bowl of melted butter, then add ½ teaspoon pure vanilla extract. Whisk ingredients together until fully incorporated, with no streaks of egg remaining.
Add 2 tablespoons Granular Swerve Sweetener, 2 tablespoons super-fine blanched almond flour, 2 teaspoons coconut flour, 2 tablespoons unsweetened cocoa powder, ½ teaspoon fresh baking powder, and 1 pinch salt (optional) to bowl. Whisk ingredients together until fully combined.
If desired, lightly grease bottom and sides of coffee mug with butter or neutral-flavored cooking spray. Transfer prepared brownie to coffee mug.
Optional: Top brownie batter with keto-friendly chocolate chips.
Place coffee mug in microwave. Microwave batter at 100% power 60 seconds or until batter is "baked" into fluffy brownie.
Once brownie batter is fully baked, remove mug from microwave. Top with keto whipped cream or keto ice cream if desired and serve warm.

Greasing the inside of the coffee mug is totally optional but can make clean-up a little easier.
