Chef’s Tips
- Don’t skip on sifting the confectioners sugar before making either icing, any lumps will really show up on the finished cookie ruining all your hard work!
- Gel food coloring will provide more vibrant colors than liquid and won’t water your icing down as much so icing made with gel color will be easier to work with.
- You can make decorate these cookies using different techniques depending on skill level and how much time you have available. Dip the cookies into the icing or brush it on if you’re using the decorating icing, or spread on the buttercream before finishing each cookie with sprinkles. For more intricate designs as pictured, use a fine tipped piping bag to edge each color area, let the lines dry and flood the cookie with more icing for a smooth finish. You can also pipe more designs onto the dry iced cookies. This technique is known as flooding. There are some great tips on decorating here, but note that the royal icing shown is not vegan-friendly!

Vegan Christmas Cut-Out Sugar Cookies
Ingredients
For the Cookies
- ½ cup vegan butter softened
- ¾ cups sugar
- ¾ teaspoons vanilla extract
- 1 ¾ cups all-purpose flour
- 4 tablespoons vegan milk of choice
- 1 teaspoon baking powder
- ¼ teaspoon salt
Favorite Easy Decorating Icing
- 3 cups sifted confectioners’ sugar the sugar MUST be sifted
- 1-2 tablespoons vegan milk of choice adding in more if needed for proper spreading consistency
- 1 tablespoon light corn syrup
- ½ teaspoon vanilla
- food coloring as needed
- colored granulated sugar and holiday sprinkles if desired, for topping
Favorite Buttercream Icing
- ½ cup vegan butter softened
- 16 ounces powdered sugar 16-ounce package
- 3 tablespoons vegan milk of choice
- 1 teaspoon vanilla extract
- food coloring as needed

Instructions
- Sift the flour, baking soda, and salt into a bowl, and set aside.
- Beat the sugar and vegan butter in a mixing bowl with an electric mixer until creamy, about 2 minutes. Mix in vanilla.
- Stir in the flour mixture until incorporated, then add the milk, 1 tablespoon at a time, until the dough comes together. Wrap the dough in plastic wrap and refrigerate for 30 minutes.
- Preheat the oven to 350 degrees F (175 degrees C). Line two baking sheets with parchment paper.
- Roll chilled dough on a floured surface to a thickness of 1/4 to 1/2 inch. Dip each cookie cutter in flour and cut out cookies, re-flouring as needed. Place cookies onto the prepared baking sheets.
- Bake in the preheated oven until just turning golden, about 10 minutes. Cool on a wire rack before decorating.
Notes
For the Decorating Icing (enough for a thick layer of icing + extra for more elaborate decorations)
- In a small bowl mix the confectioners sugar with milk (start with 1-2 tablespoons, but you will likely need more milk for the perfect spreading consistency).
- Whisk in the corn syrup and vanilla extract until the icing is smooth and glossy. If the icing is too thick add in a small amount more of corn syrup.
- Divide into as many separate bowls as you wish for different colors. Add in food coloring until desired intensity is achieved, always starting with a smaller amount and adding gradually!
- Paint the icing over the cookies using a brush, dip tops of cookies into icing, or a piping bag to decorate. Add other decorations as desired, and allow to set on waxed paper or a cooling rack.
For the Favorite Buttercream (enough to thickly frost the cookies)
- Combine the butter and powdered sugar, creaming
until light and fluffy using a en electric hand mixer or stand mixer. - Add the milk and vanilla; beat until of spreading consistency.
- Color frosting if desired, then spread onto the cooled cookies. Sprinkle with colored granulated sugar, if desired.
