Healthy No Knead Cinnamon Rolls with Cream Cheese Frosting
Ingredients
- 1 ¾ cups all-purpose flour
- 1 tablespoon baking powder
- 1 ¼ teaspoons salt optional
- 1 ¼ cups plain Greek yogurt
Filling
- ½ cup brown sweetener like Swerve
- 1 ½ tablespoons cinnamon
- 3 tablespoons coconut oil melted, or softened butter
Icing
- ½ cup cream cheese
- 2 tablespoons powdered sweetener like Swerve
- milk to thin
Equipment
- 7×11-inch rectangular pan or 8×8-inch square
- baking parchment
- unflavored floss or a sharp knife for cutting the cinnamon rolls
Instructions
- Line a 7×11-inch rectangular pan with baking parchment and set aside.
- Stir together all the ingredients for the dough. Once you have a smooth mixture, roll it out into a 12 inches × 8 inches rectangle.
- Stir together the ingredients for the filling, and spread over the dough with a knife or spatula. Roll up the dough to form the cinnamon roll spiral.
- Cut into 6 individual rolls using unflavored floss or a spark knife, and arrange in the prepared baking dish.
- Bake at 350℉ for 35-40 mins until the rolls are puffed and golden.
- For the frosting, beat together the cream cheese and powdered sweetener until smooth, thinning with milk a little if desired. Allow the rolls to cool slightly before spreading over the top.
