Keto French Toast Sticks
Ingredients
For the Keto French Toast Sticks
- 8 slices keto bread
- 2 large eggs
- ½ teaspoon pure vanilla extract
- 1 cup milk of choice whole milk, heavy cream, almond milk, low-carb milk, etc.
- 1 large pinch salt
- 2 tablespoons unsalted butter
- 1 tablespoon unsalted butter
For the Cinnamon-"Sugar" Coating
- 6 tablespoons granular Swerve or keto sweetener of choice
- 1 ½ teaspoons ground cinnamon
Serving Suggestions (All Optional)
- maple-flavored keto syrup
Equipment
- Sharp knife
- 2 shallow bowls
- 2 whisks
- Large skillet
- Spatula or tongs
Instructions
- Remove crusts from 8 slices keto bread, then cut each slice of bread into 3 equally-thick breadsticks. Set aside.
- Crack 2 large eggs directly into shallow mixing bowl, then add ½ teaspoon pure vanilla extract, 1 cup milk of choice, and 1 large pinch salt. Whisk ingredients together until fully incorporated into pale yellow mixture, with no streaks of egg remaining. Set aside.
- Add 6 tablespoons granular Swerve and 1 ½ teaspoons ground cinnamon to second shallow bowl. Whisk ingredients together until well blended. Set aside.
- Place large skillet on stovetop over medium-high heat. Add 2 tablespoons unsalted butter to skillet and continue heating pan until butter is melted.
- When butter is melted, quickly roll breadsticks in egg mixture, being careful not to soak bread. Shake excess egg mixture off breadsticks and back into bowl, then place breadsticks directly in skillet. Work quickly to pan-fry breadsticks in 2 batches.
- Pan-fry breadsticks 2 minutes, then flip breadsticks over and pan-fry other sides 2 minutes or until golden on both sides.
- Once golden, immediately remove bread from skillet and place in cinnamon-"sugar" mixture. Roll breadsticks until coated on all sides in cinnamon-"sugar". Note: work quickly to ensure bread is hot enough for cinnamon-"sugar" mixture to stick.
- Add remaining 1 tablespoon unsalted butter to skillet and let melt. Repeat process with remaining breadsticks.
- Once all breadsticks have been pan-fried and coated in cinnamon-"sugar", serve French toast sticks warm with maple-flavored keto syrup for dipping if desired.
