I’m never going to give you boring meal prep ideas, and these Mexican-inspired high-protein chicken bowls bring all the good stuff: juicy chili-lime chicken, fluffy rice, black beans, sweet corn, and creamy guacamole. A smoky, garlicky marinade gives the chicken sooo much flavor, and the fresh toppings add a taste and nutrition punch. Great for dinners or packed lunches—future you will thank you for putting homemade food on the table while saving time!

Why This Chicken Meal Prep Works So Well

  • All the spices are right in your pantry, so no heavy lifting at the grocery store. Chili powder, cumin, smoked paprika, and oregano are easy to access and yet pack a lot of flavor for the chicken.
  • I always develop a recipe with balance in mind, and the protein comes from more than the chicken. Black beans add extra protein and fiber, giving these bowls some serious staying power.
  • Restaurant-worthy loaded burrito bowls right at home. Warm rice, charred chicken, crunchy onion, and creamy guacamole deliver that experience, again and again, since these are great for meal prepping!

Cheryl’s Tested Notes & Tips

  • I let the chicken marinade sit for a bit. 30 minutes works well, but if you have the time, up to 8 hours in the fridge deepens the flavor. Just keep it within that window so the lime doesn’t start affecting the surface texture.
  • Let excess marinade drip off. The chicken should be coated, not dripping. Excess oil can cause fiery flare-ups on an outdoor grill. We definitely don’t want that!
  • Watch those chicken thighs. Cooking it can be tricky, as undercooking can happen if you remove too soon, or overcooking can make it too dry. Start checking around 5 minutes per side, and use a thermometer to ensure it reaches between 175-180°F.

Ingredient Notes

  • Boneless, skinless thighs stay juicy. If these aren’t in your fridge, I’ve also used boneless, skinless chicken breasts; just pound them to an even thickness and start checking early to avoid overcooking.
  • I use a mild American-style chili powder blend. I wouldn’t use straight ground chile or cayenne, unless you want a lot more heat. Note that smoked paprika adds smokiness even when you’re cooking indoors.
  • White rice keeps things classic. If you want to change up the rice, brown rice is nuttier in taste, while cauliflower rice makes a lighter, lower-carb base.
  • You could mix up the cheese. While I loove cotija, feta or shredded Monterey Jack is a good sub. Or skip the cheese or use a dairy-free option if preferences or allergies are involved.
  • Mix up the beans too! Pinto beans are a yummy swap with a milder flavor and creamier texture. Use the same amount, drained and rinsed. If you really hate beans, leave them out totally and add sautéed peppers and onions for extra veggies.

Best Method To Pack These Meal Prep Bowls

  • My go-to meal prep containers are the Ello Everyday glass containers. They hold a ton and have BPA-free plastic lids. Most importantly, I love the press-and-lock function, which really keeps food fresh.
  • Divide the rice, chicken, beans, and corn evenly among four containers. Let excess steam escape for a few minutes before adding the lids, then refrigerate promptly. No need to wait for everything to cool completely!
  • Keep the fresh toppings separate (regardless of my lovely photos). The tomatoes, red onion, cilantro, and cheese can all go into little containers so you can add them to reheated chicken and rice.
  • I try to make the gaucomole at the moment. Homemade guac is best made fresh, so leave it out of your containers. An easy shortcut is to buy sealed guacamole cups and open one when you’re ready to eat. Pack a lime wedge separately for that final squeeze!

Storage Instructions & Reheating

  • Refrigerator: Store these Mexican chicken bowls between 3-4 days. And you don’t need to wait for them to completely cool to store them; a 2-hour window works.
  • Freezer: If you’re doing make-ahead frozen meals, freeze the chicken, rice, beans, and corn in individual portions for up to 3 months. I don’t freeze these much since I prefer to eat them fresh, but up to you!
  • Reheating: I loosely cover the chicken, rice, beans, and corn and then microwave in intervals, stirring as needed, until the leftovers are heated through. A tip: a small splash of water keeps the rice moist.

Recipe FAQs

  1. Can I make Mexican chicken bowls without an outdoor grill? For sure, I’ve used a grill pan over medium-high heat, which works super well. Cook in batches if needed so the chicken has room to brown.
  2. Can I use chicken breasts instead of thighs? Heck yeah, I have! Use 1½ pounds of boneless, skinless chicken breasts, and then pound them to an even thickness. Use the same marinade, but cooking time will vary with thickness, so check with a thermometer.
  3. Can I eat meal-prep chicken bowls cold? I’m part of a thousand different committees and often pressed for time, so YES. Eat ’em cold over the sink before transporting yet another kid somewhere. Just don’t eat 5 day old Mexican chicken bowls, and stay within 3 to 4 day window.

Ingredients

For the Chicken and Marinade

  • 1½ pounds boneless, skinless chicken thighs
  • 3 tablespoons olive oil
  • 2 tablespoons lime juice, from about 1 large lime
  • 3 tablespoon garlic cloves, minced
  • 1 teaspoon mild chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

For the Bowls

  • 2 cups cooked white or brown rice
  • 1 15-ounce can black beans, drained and rinsed
  • 1 cup corn kernels, fresh, frozen, or drained canned
  • 1 pint cherry tomatoes, halved
  • ½ cup guacamole
  • ½ medium red onion, thinly sliced
  • ¼ cup chopped fresh cilantro
  • 1 lime, cut into wedges
  • ½ cup crumbled cotija cheese, feta, or shredded cheese

Equipment

  • Grill or grill pan
  • Large mixing bowl
  • 10-inch nonstick skillet

Instructions 

  • Whisk together 3 tablespoons olive oil, 2 tablespoons lime juice, 3 minced garlic cloves, 1 tablespoon chili powder, 1 teaspoon cumin, 1 teaspoon smoked paprika, ½ teaspoon oregano, ½ teaspoon salt, and ¼ teaspoon black pepper in a large bowl.
  • Add 1½ pounds boneless, skinless chicken thighs and toss to coat. Cover and refrigerate for at least 30 minutes or up to 8 hours.
  • Heat a grill or grill pan over medium-high heat. Remove chicken from marinade, letting excess drip off. Discard remaining marinade. Grill approximately 5–6 minutes per side, or until the thickest part reaches 175–185°F.
  • Transfer chicken to a clean cutting board. Let rest for 5 minutes, then slice into strips.
  • Warm 2 cups cooked rice and 1 (15-ounce) can drained, rinsed black beans or pinto beans. Heat 1 cup corn kernels in a nonstick skillet over medium heat, stirring occasionally, until hot.
  • Divide rice, beans, corn, and chicken evenly among 4 bowls or meal-prep containers.
  • For immediate serving, divide 1 pint halved cherry tomatoes, ½ thinly sliced red onion, ¼ cup chopped cilantro, ½ cup guacamole, and ½ cup crumbled cotija or shredded cheese among the bowls. Serve with 1 lime cut into wedges.
  • For meal prep, pack tomatoes, onion, cilantro, cheese, and lime separately. Refrigerate promptly and enjoy within 3–4 days. Add freshly made guacamole or a newly opened individual guacamole cup just before eating.

Notes

Make it dairy-free: Use a vegan or dairy-free cheese option.
Chicken breasts: Swap in 1½ pounds of boneless, skinless chicken breasts and pound them to an even ½- to ¾-inch thickness. Marinate as directed, then grill over medium-high heat for about 5–7 minutes per side, starting to check at 5 minutes per side. Remove when the thickest part reaches 165°F, then rest for 5 minutes before slicing. 
Corn: Drained canned corn can be added without heating. Cook frozen corn according to its package directions before adding to the bowls.
