This Copycat Cracker Barrel Meatloaf Recipe satisfies the craving; we’re talking tender ground beef, sharp cheddar, finely diced veggies, and a sweet, tangy glaze that makes the end piece worth calling dibs on (my kids always win). Serve with green beans and creamy mashed potatoes, and enjoy this dinner classic, minus the 45-minute wait for a table!

Why This Copycat Recipe For Cracker Barrel Meatloaf Is the Best
- Mine comes without those tomato pieces. Cracker Barrel’s meatloaf has tomatoes; my version uses ketchup mixed right into the beef. You still get that tomato sweetness and tang but with a smoother texture (for anyone who picks around tomato chunks, we all know someone!).
- We shape the meatloaf on a rimmed baking sheet, so the sides get direct exposure to the oven’s heat, giving you more of those crispy, browned edges. If the end piece is your fave, welcome to meatloaf heaven.
- I’m always looking toward the bigger picture of my week, and this makes enough servings for dinner now, but also sandwiches later. You can make it ahead so dinner is faster (it’s only 15 minutes of prep), or freeze cooked slices for future you—an entire meatloaf at home has its perks!
Cheryl’s Tested Notes & Tips
- For a more even and faster-cooking result, I form the meatloaf on a pan. This helps prevent overcooking of the outer layers. Baking in a loaf pan basically steams the meat and can make it very juicy, but I prefer freeform, and it’s still juicy!
- Careful with overmixing; do it gently, then stop. I work the ingredients together until just evenly combined. Never knead or firmly pack the mixture, as that can give you dense, tough meatloaf.
- I dice those veggies small. We want to really spread that flavor throughout, and finely chopped onion and bell pepper soften more easily. Big chunks can leave crunchy pockets and make slices harder to hold together. We don’t want a meatloaf that falls apart!

Top Ingredient Notes
Ground beef – I use an 80/20 blend because of the flavor and moistness factor. You can use 85/15 for a slightly leaner loaf, but be careful not to overcook it. I’ve been there, and very lean beef can get dense and hard in a second.
Saltines – These are the superstar here! You don’t want to use breadcrumbs, because crackers really absorb liquid, while the eggs help hold everything together. The whole result is tender slices of meatloaf.
Cheddar – sharp cheddar is my pick for that tangy, savory flavor, but you can sub in mild cheddar or Colby for something more subtle.
Milk – always and forever, I use whole milk for the extra richness, and it hydrates the crushed saltines very well. If 2% is all you have in the fridge, you could use that, but note that I haven’t tested that version.
Yellow mustard – stick with this and don’t swap in Dijon as the flavor will be sharper (unless you really like that!).
How To Eat Copycat Cracker Barrel Meatloaf
- Potatoes! I mean really, the pairing is classic and a must-eat! Try them with these tasty recipes: red skin mashed potatoes, Air Fryer red potatoes, or creamy whipped potatoes.
- Bring on the vegetables. Pair this comfort-food meatloaf with some lighter veggies. Some of my faves are Instant Pot broccoli, Instant Pot cauliflower, sous vide asparagus, or Air Fryer brussels sprouts.
- Meatloaf sandwich. Tuck a warmed slice into toasted bread with crisp lettuce, pickles, and a swipe of mustard; this really is amazing for a quick lunch!

Storage & Make-Ahead Tips
- Refrigerator: I use this meatloaf for about a week, so you can store it for that long. It’s easier for me to slice it up and use individual pieces in other recipes.
- Freezer: If I want to do make-ahead for upcoming meals, I’ll freeze individual pieces, and you can keep it stored for up to 3 months.
- Making it ahead: Should my parents be coming by for dinner, I shape the loaf on the pan and keep it cold for 24 hours, and then pop it into the oven on the day of. I then store the glaze separately. Just remember that a cold loaf may take a bit longer to cook, so watch the time and doneness.
Recipe FAQs
- Is meatloaf better on a baking sheet or in a loaf pan? I’m all about freeform; it’s my preference! A baking sheet lets the sides brown and allows rendered fat to drain away from the loaf. A loaf pan holds the meat in its juices and creates a more uniform shape. Truthfully, either method works, but the baking time may differ.
- Why does my meatloaf fall apart when I slice it? Oof, I hear you; sometimes it’s too little binder, chunky vegetable pieces, or slicing into the loaf before it has rested. Measure the crackers correctly, use both eggs, and remember to finely dice the vegetables. And give the finished meatloaf a full 10 minutes to rest.
