- Oh my GOD, the FLAVORS! It starts with juicy, tangy pineapple spears, rubbed down with a simple blend of brown sugar, cinnamon, and salt. I mean, that sounds amazing all on its own, right? BUT THEN! Then, we smoke the pineapple long enough for that incredible flavor to penetrate the fruit. Every bite is incredible.
- Smoked pineapple can be a side dish or a dessert! It’s so good with grilled pork or teriyaki chicken or really any sort of grilled or smoked protein you like. If you’ve got sides covered, though, serve the smoky spears with a giant scoop of vanilla bean ice cream. It’s sort of like bananas foster, but with pineapple. A pineapples foster, if you will!
How to Choose a Perfect Pineapple
Ideal pineapples will be heavy for their size, give just a little when squeezed gently, and have a beautiful yellow-gold color at the bottom with healthy green leaves on top. The bottom of the pineapple should smell a little sweet, too.
It’s ok if the pineapple is a little green, especially if you’re shopping a few days before you plan to cut and cook the fruit. If it’s dark yellow or orangey, though, keep on looking.
My Trick for Extra-Juicy Pineapple
Turn it upside down!
No – really! Pineapple is typically displayed and stored upright, which means all the juices settle to the bottom of the fruit over time.
Before you peel and slice your fresh pineapple, insert the stem of the pineapple into a large jar, cup, or vase so it can stand “up” easily and just let it sit upside down for a couple of hours. That allows the juices to redistribute throughout the flesh of the fruit, meaning you’ll get more flavorful bites from each spear.
Cheryl’s Tips
- You don’t have to cut the pineapple into spears! Chunks and slices (or rings) will work, too. Just be careful not to cut the pieces too small. You don’t want to sacrifice any pineapple to the smoker grate!
- Using wood to smoke the pineapple spears? Choose something mild, like apple or maple. Hickory would also work, and maybe even mesquite, too! It just depends on how you plan to serve the smoked pineapple.
- Have a grill but no smoker? That’s fine! Just fire up your grill on one side and place the pineapple spears on the opposite side. Grilling food with indirect heat like this gives you similar smoked results. You can even place a pan of soaked wood chips over the direct flame for even more of that smoky flavor.

Smoked Pineapple Recipe
Ingredients
- 1 large pineapple approximately 4-5 pounds
- ½ cup packed brown sugar light or dark
- 1 ½ teaspoons ground cinnamon
- ½ teaspoon sea salt
Equipment
- smoker or pellet grill
- Cutting board
- sharp chef's knife
- Small bowl
- whisk or spoon
- Tongs
- large plate
Instructions
- Preheat smoker to 250° Fahrenheit.
- Peel 1 large pineapple, then cut flesh of pineapple into long, equally-sized spears. Set spears aside.
- Add ½ cup packed brown sugar, 1 ½ teaspoons ground cinnamon, and ½ teaspoon sea salt to small bowl. Mix ingredients together until well blended.
- Rub cinnamon sugar mixture onto pineapple spears, coating all sides of each spear evenly.
- Place seasoned pineapple spears directly onto grates of preheated smoker and close lid. Smoke pineapple spears, undisturbed, 20 minutes or until spears are lightly browned.
- Once lightly browned, flip pineapple spears over. Smoke spears 20 to 30 minutes more or until spears are browned on other side.
- Carefully remove browned pineapple spears from smoker. Serve as desired.
Notes
- Cinnamon-Sugar Mixture: Feel free to increase the amounts of each ingredient for a heavier, more pronounced coating.
