Vegan Banana Pudding
Combine the banana, milk, and vanilla extract and add to a small pot over medium heat.
Once the mixture warms up, whisk in the arrowroot starch and salt.
Cook over low heat, stirring occasionally until the mixture thickens.
Remove mixture from heat and let cool. Then refrigerate for two hours before serving.
Layer with vegan cool whip and vegan vanilla wafers to serve. Enjoy!
