What We Love About This Recipe
- A perfect copycat for Chick-Fil-A’s cobb salad, but faster, cheaper, and made just how you like it. Use as much (or as little) of any ingredient as you want. Smother it in avocado-lime dressing, or swap it out for sweet honey mustard or creamy ranch. Skip the corn or the cherry tomatoes if you’re not in the mood. You’re in charge!
- It’s made with simple, hearty ingredients and making it is easy-peasy. Cook some chicken, blend up a dressing, then toss everything together and enjoy. You’ll have lunch (or dinner) ready in no time.
- The avocado-lime dressing is delicious enough to use on a variety of dishes. It keeps for about a week if it’s refrigerated in an airtight container, so you can make up a batch to keep on hand for any sudden cravings.
Cheryl’s Tips
- You can absolutely cook your own chicken for this salad, but I like to use frozen popcorn chicken or chicken nuggets to make things faster and easier. Just Bare makes lightly-breaded chicken breast bites that taste JUST LIKE Chick-Fil-A’s nuggets in my opinion, and they’re perfect for cobb salad!
- Fire-roasted corn kernels add that much more flavor to the dish, but any corn is fine. If you’re using canned corn, make sure to drain and rinse the kernels really well first. For frozen corn, defrost the corn in the fridge overnight, then let it come to room temperature before adding it to the salad.
