Keto Gumbo

Heat oil in a large pot over med heat and slowly whisk in xanthan gum. Simmer until congealed, about 5 minutes.

Add in garlic, celery, onion, bell peppers. Cook 10 minutes.

Add the chicken (or add cooked chicken at the end) & sausage.

Add thyme, salt, Cajun seasoning, filè powder, & sausage.

Gradually stir in broth

Stir in the diced tomatoes.

Then stir in the okra, shrimp, and bay leaves,

Add the hot sauce

Simmer covered on low heat for 1 - 1 1/2 hours.

After simmering, sprinkle in a little more xanthan gum on top of the gumbo & stir well.
