Gluten Free Peach Cobbler

This Southern-style gluten free peach cobbler is the perfect dessert for summer cookouts. Sweet, juicy peaches are baked into buttery, crisp cobbler crust, topped with a dusting of sugar and served with a scoop of rich vanilla ice cream.
What We Love About This Recipe
- This peach cobbler could not be any easier to make! With only 7 ingredients, there’s nothing complicated or really involved about any part of this recipe. Just mix up the gluten free cobbler crust, tuck in the sliced peaches, dust it with sugar, and bake!
- The textures and flavors in this dish are everything you would hope for in a Southern-style peach cobbler, despite the crust being totally gluten free. In fact, you’ll have to tell people there’s no gluten in this recipe, because they definitely wouldn’t know it otherwise!
Cheryl’s Tips
- You can make this cobbler with fresh peaches, frozen peaches, OR canned peaches! The prep is a little different for each type, though. For fresh peaches, make sure to peel them and remove the pits, then slice them into wedges. With canned peaches, you’ll need to drain them and then rinse them. Technically you don’t have to rinse them, but if they’re canned in syrup, they may be too sweet for the cobbler. Frozen peaches need to be defrosted overnight in the fridge, then drained.
- For a richer gluten free peach cobbler, replace the ¾ cup of granulated sugar on top with ¾ cup brown sugar and a little cinnamon.

Gluten Free Peach Cobbler
Ingredients
For the Cobbler Crust
- 1 stick unsalted butter
- 2 cups gluten-free all-purpose flour
- 1 tablespoon fresh baking powder
- ½ teaspoon salt
- 1 ¾ cups granulated sugar
- 2 cups milk of choice
For the Cobbler Filling
- 3-4 cups sliced peaches see Notes
- 1 stick unsalted butter cut into small pieces
- ¼ cup granulated sugar
Equipment
- baking dish 8×8, 9×9, or 9×13
- Large mixing bowl
- whisk
- Silicone spatula
Instructions
- Preheat oven to 350° Fahrenheit.
- Once oven has preheated, place 1 stick unsalted butter in baking dish. Place baking dish in preheated oven and warm butter 5 minutes or until completely melted.
- While butter melts, add 2 cups gluten-free all-purpose flour, 1 tablespoon fresh baking powder, ½ teaspoon salt, and 1 ¾ cups granulated sugar to large mixing bowl. Whisk ingredients together until well blended.
- Add 2 cups milk of choice to dry ingredients in small increments, whisking until all milk is fully incorporated. Mixture should be smooth with no clumps of dry ingredients remaining.
- When butter has melted completely, carefully remove baking dish from oven. Transfer prepared crust batter to baking dish and spread batter out evenly across baking dish. Do not stir crust batter into melted butter.
- Layer 3-4 cups sliced peaches on top of crust batter, distributing peaches as evenly as possible across baking dish. Gently press peaches into crust batter.
- Top peaches with 1 stick unsalted butter cut into small pieces, scattering pieces of butter evenly across top of peach layer.
- Sprinkle ¼ cup granulated sugar evenly over top of peaches.
- Place baking dish in preheated oven. Bake cobbler 25 minutes or until crust is golden brown and baked through.
- Carefully remove cobbler from oven and set aside. Let cobbler rest 30 minutes.
- After 30 minutes, serve cobbler warm or at room temperature with vanilla ice cream if desired.
Notes
- Peaches: Fresh, canned, and frozen peaches are all fine for this recipe. For fresh peaches, make sure to peel them and remove the pit before slicing them into wedges. Frozen peaches need to be defrosted in the fridge overnight, and canned peaches will need to be drained and rinsed well.

can you layer the peaches down first and then distribute the mixture over the top?
We haven’t tried that, so we can’t say for sure. It *should* work, though! Be sure to let us know if you try it!
This was a delicious gluten-free dessert, but it really does take a 9 x 13 pan if you’re using 4 cups of sliced peaches. I used a 9 x 9 pan and almost doubled the cooking time and it still was not done in the middle.
