This Southern-style gluten free peach cobbler is the perfect dessert for summer cookouts. Sweet, juicy peaches are baked into buttery, crisp cobbler crust, topped with a dusting of sugar and served with a scoop of rich vanilla ice cream.

What We Love About This Recipe

  1. This peach cobbler could not be any easier to make! With only 7 ingredients, there’s nothing complicated or really involved about any part of this recipe. Just mix up the gluten free cobbler crust, tuck in the sliced peaches, dust it with sugar, and bake!
  2. The textures and flavors in this dish are everything you would hope for in a Southern-style peach cobbler, despite the crust being totally gluten free. In fact, you’ll have to tell people there’s no gluten in this recipe, because they definitely wouldn’t know it otherwise!

Cheryl’s Tips

  • You can make this cobbler with fresh peaches, frozen peaches, OR canned peaches! The prep is a little different for each type, though. For fresh peaches, make sure to peel them and remove the pits, then slice them into wedges. With canned peaches, you’ll need to drain them and then rinse them. Technically you don’t have to rinse them, but if they’re canned in syrup, they may be too sweet for the cobbler. Frozen peaches need to be defrosted overnight in the fridge, then drained.
  • For a richer gluten free peach cobbler, replace the ¾ cup of granulated sugar on top with ¾ cup brown sugar and a little cinnamon.
  • Make sure to use a 9×13 baking dish for this recipe — smaller pans won’t accommodate the volume of batter and filling.

Ingredients

For the Cobbler Crust

  • 1 stick unsalted butter
  • 2 cups gluten-free all-purpose flour
  • 1 tablespoon fresh baking powder
  • ½ teaspoon salt
  • 1 ¾ cups granulated sugar
  • 1 ¼ cups milk of choice

For the Cobbler Filling

  • 3-4 cups sliced peaches see Notes
  • ¼ cup granulated sugar

  • Large mixing bowl

  • Silicone spatula

Instructions 

  • Preheat oven to 350° Fahrenheit.
  • Once oven has preheated, place 1 stick unsalted butter in baking dish. Place baking dish in preheated oven and warm butter 5 minutes or until completely melted.
  • While butter melts, add 2 cups gluten-free all-purpose flour, 1 tablespoon fresh baking powder, ½ teaspoon salt, and 1 ¾ cups granulated sugar to large mixing bowl. Whisk ingredients together until well blended.
  • Add 1 ¼ cups milk of choice to dry ingredients in small increments, whisking until fully incorporated. Batter will be thick but pourable.
  • When butter has melted completely, carefully remove baking dish from oven. Transfer prepared crust batter to baking dish and spread batter out evenly across baking dish. Do not stir crust batter into melted butter.
  • Layer 3-4 cups sliced peaches on top of crust batter, distributing peaches as evenly as possible across baking dish. Gently press peaches into crust batter.
  • Sprinkle ¼ cup granulated sugar evenly over top of peaches.
  • Bake cobbler 45–55 minutes or until crust is deep golden brown and set in the center. If the edges brown too quickly, tent loosely with foil.
  • Carefully remove cobbler from oven and set aside. Let cobbler rest 30 minutes.
  • After 30 minutes, serve cobbler warm or at room temperature with vanilla ice cream if desired.

Notes

  • Peaches: Fresh, canned, and frozen peaches are all fine for this recipe. For fresh peaches, make sure to peel them and remove the pit before slicing them into wedges. Frozen peaches need to be defrosted in the fridge overnight, and canned peaches will need to be drained and rinsed well.

    I used a 9×13 pan, and followed the recipe to a tea and my pan is currently over flowing and the butter in the bottom is bursting over the sides. And I only used 3.5cups of frozen peaches. I even took it out of the oven for a moment to soak up some of the overflowing butter. I thawed and drained my peaches properly too so I figured it wouldn’t be a problem. And it’s been in the oven at 350 for 45 mins and isn’t even close to done yet. The crust is still white and looks almost like a meringue

    Has this recipe been retested and corrected yet? Was thinking of trying it, but when I read the comments, I didn’t want to waste the ingredients if the proportions are not right.

    I’d like to add to my previous review. The cobbler did taste very good. I would certainly recommend using a 9 X 13 dish to bake it in. I’d also use an extra 1/2 cup to 1 cup flour, or use less milk. Also, I’d probably cut back on the sugar a little, it was very sweet.

    I really like this recipe! Came out delicious! I used mixed berries instead of peaches and added a sprinkle of cinnamon on top. Sooo good!

    Even in a 9×13 pan this takes way longer than 30 minutes to bake! I’m baking as I’m writing this and it’s already been in the oven for 45 minutes and not done yet.

    Not a good recipe.
    I should have used my common sense you can’t cook with 3 cups liquid and only 2 cups flour and think it will coagulate. Besides juice from the fruit. Author needs to try their own recipe.

    This was a delicious gluten-free dessert, but it really does take a 9 x 13 pan if you’re using 4 cups of sliced peaches. I used a 9 x 9 pan and almost doubled the cooking time and it still was not done in the middle.
