Chinese Vegetable Soup
In a large pot, bring vegetable broth and water to a boil.
Reduce heat to low. Add bok choy, mushrooms...
Add shredded carrots. Cook approximately 2 minutes.
Add soy sauce...
Add ginger and sesame oil. Cook an additional 2-5 mins, until bok choy is bright green.
Season with salt and pepper. Garnish with cilantro or scallions.
