Game day just got a whole lot tastier! These loaded buffalo chicken fries are the ultimate app – easy to share, full of flavor, and super satisfying. Your favorite fries topped with shredded chicken, tangy buffalo sauce, blue cheese crumbles, and creamy ranch dressing. Your guests will ask for these again and again!

🍟 What Makes This Recipe So Good

  • These buffalo chicken fries are absolutely loaded with delicious flavors. Tangy buffalo sauce, bold blue cheese, creamy ranch dressing, all on top of your favorite style of french fries. One bite and you’ll be hooked!
  • Since we’re using mostly pantry and freezer staples, they’re SO easy to make and pretty budget-friendly, too. You might even be able to throw a batch together with the groceries in your kitchen right now!
  • Buffalo chicken fries are a great choice for tailgating, game day, or just about any party, but don’t stop there. Whip them up any time you have a group to feed, or put together a single-serving version for an easy dinner one night.

👩🏼‍🍳 Chef’s Tips

  • The chicken’s a pretty important component to buffalo chicken fries, but what kind of chicken you use is entirely up to you! Feel free to cook chicken specifically for this recipe (check out this post on The Best Shredded Chicken Ever for my favorite method) or you can use store-bought rotisserie chicken for ease. Just shred or chop the meat really well so you don’t have to pull apart large pieces while you’re eating.
  • Any type of french fries will work, but I recommend avoiding shoestring fries and choosing something a little more substantial instead. You want to maintain a good fry-to-toppings ratio, plus you don’t want to end up with a bed of soggy fries. Remember, you’re layering 2 types of cheese, chicken, and 2 sauces on top of them.
  • I included a super simple recipe for homemade buffalo sauce that tastes just like you’d find at your local bar or wings place. If you want to save a little bit of time and effort, though, you’re welcome to use a store-bought buffalo sauce instead.

Ingredients

For the Buffalo Sauce

  • ¼ cup Louisiana style hot sauce
  • ¼ cup unsalted butter
  • 1 tablespoon white vinegar
  • ¼ teaspoon Worcestershire sauce
  • ⅙ teaspoon garlic powder
  • ⅙ teaspoon paprika
  • salt to taste
  • freshly cracked black pepper to taste

For the Chicken

  • 1 pound fully-cooked chicken shredded or chopped into 1-inch chunks

For the Fries

  • 1 32-ounce bag frozen french fries any type, cooked as preferred

For the Toppings

  • 8 ounces shredded fresh mozzarella
  • ⅓ cup blue cheese crumbles
  • ⅓ cup sliced green onions green parts only
  • ⅓ cup ranch dressing
Get Recipe Ingredients

Instructions 

  • Preheat oven to 400° Fahrenheit.
  • Add ¼ cup Louisiana style hot sauce, ¼ cup unsalted butter, 1 tablespoon white vinegar, ¼ teaspoon Worcestershire sauce, ⅙ teaspoon garlic powder, ⅙ teaspoon paprika, salt, and freshly cracked black pepper to medium saucepan. Place saucepan on stovetop over medium-low heat.
  • Whisk ingredients together until sauce begins to simmer and butter is completely melted. Taste sauce and adjust salt and/or pepper as needed.
  • Simmer buffalo sauce 1 to 2 minutes, then remove from heat and set aside. Let sauce cool completely.
  • Once buffalo sauce is cooled, pour sauce over 1 pound fully-cooked chicken in large mixing bowl. Stir ingredients together until chicken is fully coated in buffalo sauce.
  • Layer 1 32-ounce bag frozen french fries (cooked as preferred) evenly across bottom of baking pan. Top fries with 8 ounces shredded fresh mozzarella and prepared buffalo chicken, spreading cheese and chicken evenly across top of fries.
  • Place baking pan in preheated oven. Bake 5 minutes or until mozzarella is melted, then carefully remove baking pan from oven.
  • Sprinkle ⅓ cup blue cheese crumbles and ⅓ cup sliced green onions across top of melted mozzarella. Immediately before serving, drizzle ⅓ cup ranch dressing across top of dish and serve warm with romaine lettuce if desired.

Notes

  • Buffalo Sauce: You’re welcome to use a store-bought buffalo sauce instead of making your own if you prefer.
  • Chicken: You can cook chicken specifically for this recipe, or you can use leftover chicken or rotisserie chicken. Whatever you use, be sure to shred it or chop it well.
  • Make it Vegetarian: Omit the Worcestershire sauce and replace the chicken with chopped cauliflower florets (cooked as preferred) or tofu (cooked as preferred).
