This could be the best gluten free stuffing recipe ever! 30 minutes of prep delivers sausage, mushrooms, a whole lot of butter, and crispy golden edges that pack tons of savory goodness. Nobody at your holiday table will know it’s gluten free, just you and me!

Why You Should Make This Gluten Free Stuffing For Thanksgiving

  • Your guests can enjoy the same side dish! Maybe your uncle is sensitive to gluten or your cousin’s 10-year-old is. Using gluten-free bread, sausage, and broth makes this stuffing perfect for anyone who has to avoid gluten.
  • I made sure this has the classic flavor. We all picture stuffing with the basics, and this has those elements: browned sausage, buttery mushrooms, and fresh sage bring that original Thanksgiving taste. But the beauty of gluten free bread is it’s a little less heavy than typical bread.
  • You can get a head start, aka be less stressed. The day before, toast the bread and cook the sausage and vegetables, and store them separately until you’re ready to make this. Less chopping means more time for everything else competing for your attention.

  • Don’t pack the stuffing down! Doing this makes it too dense. Spoon it in gently, and check that the center reaches 165°F (use an instant-read thermometer) before serving.

Helpful Ingredient Notes

Gluten free bread – I always pick a sturdy gluten-free sandwich loaf or sourdough labeled gluten-free. Ordinary sourdough is not gluten-free! Aim for about 12 cups of ¾-inch cubes, since loaf sizes and bread density do vary between brands.

Sausage – use whatever sausage works for you. A breakfast sausage has a peppery, savory flavor, while sage sausage is all about the holiday herbs. Double-check for gluten-free labeling. If neither of these choices are appealing, sub in gluten-free turkey or Italian sausage.

Butter and heavy cream: – the butter flavors the bread, veggies, and creates that crispy topping we want! If you need to make it dairy-free, use equal amounts of both dairy-free butter and dairy-free heavy cream (make sure it’s unsweetened). I can’t guarantee it’ll brown the same, but see how it goes!

Chicken broth – same as the sausage; use gluten-free chicken broth. I try to buy lower-sodium broth too, since it allows me to control the seasoning.

Mushrooms – cremini mushrooms have an earthy depth, but you could also use white button mushrooms. They have a more subtle flavor, but equally as good!

Holiday Serving Suggestions

This is how I’d build my holiday table with this stuffing on the side!

  1. Turkey. It’s an obvious classic, and here are some delicious recipes to pair with it: slow cooker turkey tenderloin, juicy oven roasted turkey Legs, or grilled turkey breast
  2. Cranberry sauce. I love these two picks that taste amazing with this stuffing: keto cranberry Sauce or jellied cranberry sauce (my mom’s done this one for years!)
  3. Veggies and potatoes. You can’t have holiday dinner without the veggie and potato sides. Try hasselback sweet potatoes, Boursin mashed potatoes, Brussels sprouts salad, or Instant Pot carrots with a maple butter sauce. Honorable mention is our keto broccoli salad!
  4. Other condiments. You can pair this stuffing with our gluten free turkey gravy!
  5. Desserts. I just published this keto pumpkin pie, and readers are loving it. Or you could also do this vegan apple pie, or this to-do-for gluten free pecan pie.

Storage, Make-Ahead, & Reheating Tips

  • Refrigerator: You can keep this stuffing for about a week (like, between 4-5 days). It’s yummy as leftovers, and even use it for breakfast by adding a cooked egg on top!

  2. How do I keep my gluten free stuffing from getting mushy? Follow the recipe thoroughly; toast the bread well, cook off excess moisture from the veggies, and don’t pack the mixture into the baking dish. Finally, make sure the bread-to-liquid ratio is balanced (approximately 12 cups of bread cubes).
